
Bourbon Bacon French Toast

Bourbon bacon & banana loaded Bailey’s dipped French Toast! This tower of toasty madness is gonna give your brunch the bacon boost it’s been waiting for!
The ingredients:

- 3 bananas
- 6 tbs butter
- 2 tbs castor sugar
- 30 ml bourbon (or whisky)
- 8 brioche slices
- 16 slices crispy smoked bacon
- 4 tbs maple syrup
- 4 tbs crème fraîche
French-toast mixture
- 14 large eggs
- 180 ml Bailey’s Irish Cream
- 60 ml milk
- 1 tbs brown sugar
- ¼ ts cinnamon

How to make:
Duration: 30 minuten
Preparation: 45 minuten
Preheat the oven to 70°C. In a bowl, combine the French toast mixture ingredients and set aside.
Peel the bananas and cut them in half. Heat half of the butter in a frying pan and fry the bananas briefly over high heat. Quickly add the castor sugar, let it caramelize and then flambé with the bourbon. Remove from heat and keep the bananas warm in the oven. The trick with the bananas is that you work hot and fast so that they still have a bit of structure. If you bake them too slowly, they will become very soft and mushy – also tasty, but difficult to stack later.

Dip the slices of brioche into the French Toast mixture, flip and make sure both sides soak up well. Heat some butter again in the (cleaned) frying pan and fry the slices of brioche in pairs or threes until golden brown. In the meantime, keep them warm in the oven.
Once all the slices of bread are baked, it’s time to start stacking your tower: French Toast, fried banana, crispy bacon. Pour over some maple syrup in between. Finish it off with some crème fraîche and attack that tower!
