Smokey’s Chicken rub
Makes the rooster crow
Every chick digs this chicken rub. They call it a rub because that’s what you need to do: rub it in there. When using a rub be mindful of the sugar. It’s in there because it gives an amazing bark with low & slow BBQ. However: sugar turns bitter when it burns, so these rubs aren’t as well suited to direct grilling at high temperatures.
The ingredients:
(300 ml)
Chicken rub
- 2 oz (60 g) lemon pepper (Verstegen)
- 1⅓ oz (40 g) paprika
- ⅔ oz (20 g) smoked paprika
- ⅔ oz (20 g) salt
- 1⅔ oz (50 g) granulated sugar
- ⅔ oz (20 g) brown caster sugar
- 1 oz (30 g) granulated garlic
- ⅔ oz (20 g) granulated onion
- 1 tbsp ground black pepper
- 1 tsp chili powder
- 2 tbsp dried basil
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
