Smoked stuffed zucchini

If you have friends that love zucchini, you should feed them this savoury winter dish. Even meat lovers can’t help but adore these lovely round zucchini stuffed with truffle and nuts, and they’re deceptively easy to make. At Smokey Goodness we do our best to provide outstanding BBQ meals to meat, fish, and veggie lovers alike, and this veggie BBQ star comes straight out of our existing catering repertoire.

The ingredients:

(serves 4)
  • 4 round zucchini’s
Truffle & nut stuffing
  • 1 egg
  • 8½ fl oz (250ml) unsweetened whipping cream
  • 1 tbsp truffle tapenade
  • 3½ oz (100g) walnuts, roughly chopped
  • salt and freshly ground black pepper
  • 9 oz (250g) scamorza, grated

  • BBQ with cover for indirect grilling

How to make:

Duration: prep 1o minutes

Cooking: about 40 minutes

Prepare a BBQ with cover for indirect grilling and heat to 180 °C (256 °F).

Meanwhile, make the stuffing by whisking the egg in with the cream. Add the rest of the ingredients and give it a good stir.

Carefully cut the tops with the stem off the zucchinis (keep the tops). Use a spoon to hollow them out until the walls are about half an inch thick.

Stuff the courgettes with the stuffing and replace the tops. Place your stuffed zucchinis on the BBQ, cover and grill for about 30 minutes, until the courgettes have softened and the filling is firm.
