Spice up your beef
This beef rub will get any piece of beef you make to the next level. They call it a rub because that’s what you need to do: rub it in there. When using a rub be mindful of the sugar. It’s in there because it gives an amazing bark with low & slow BBQ. However: sugar turns bitter when it burns, so these rubs aren’t as well suited to direct grilling at high temperatures.
The ingredients:
(300 ml)
Beef rub
- 1 oz (30 g) paprika
- 1 oz (30 g) smoked paprika
- 2⅓ oz (70 g) coarse sea salt
- ⅓ oz (10 g) smoked salt, ground
- 1 oz (30 g) granulated sugar
- ⅔ oz (20 g) brown caster sugar
- ⅔ oz (20 g) granulated garlic
- ⅔ oz (20 g) granulated onion
- 3 tbsp black Lampong Pepper, crushed (or black pepper coarsely ground with mortar and pestle)
- 1 tbsp chilli powder
- 1 tbsp ground coffee
- 1 tbsp cocoa
- 1 tbsp dried oregano
- 1 tsp ground cumin
