It had been a few years since we last visited Snow’s BBQ (see the article here) and we were in for quite the surprise. Last time around we joined the cue around 06:00 am and ended up nr. 16 in line. This time we arrived at 4 am in the morning finding ourselves behind 84 other early birds of whom the first nestled himself in front of their door at a whopping 23:15 pm the night before. The fact that it was below freezing temperatures this night makes it all the crazier that people are willing to spend the night outdoors to line up for a BBQ breakfast served as soon as the door opens at 08:00 am in the morning. To credit this increase of BBQ lovers flocking to Lexington only to the appearance of Pitmaster Tootsie Tomanetz in the Netflix Show Chef’s Table would not do them right. Because there is more behind their ongoing success, much more.

SNOW’S BBQ – A LOT OF LOVE AND ATTENTION

Thanks to an introduction from our BBQ friend Wayne Mueller from the nearby Louie Mueller Barbecue we got an opportunity to jump the rope and get close into the action. Handy because these days during pre-opening hours the cooking area is roped off with a red line keeping the curious crowds from stampeding the work zone. This gave us a chance to take good photos for our latest BBQ book ‘brand new BBQ’ and steal some of their precious time for a quick interview. Yes, it was the authentic barbecue that brough us to Lexington but we also had some burning questions to ask. As a fellow BBQ entrepreneur I was curious to find out how they cope with the ever increasing crowds flocking their BBQ joint, the competition that -with the aid of technology and kitchen tricks – are joining the ranks in the Texas Best BBQ listings and how despite all of this they continue to upkeep their incredible quality.
